Easy Cake Mix Cookies are a fun way to mix and match cake flavors to add-ins! My kids LOVE to make these!

- Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
- In a large bowl mix together cake mix, eggs, and oil until smooth. Alternately you can do this step in the bowl of your stand mixer with the paddle attachment, mixing ingredients on low until combined.
- Mix in desired add-ins until evenly incorporated.
- Using a medium (2- tablespoon) cookie scoop portion the dough onto the prepared cookie sheet 2- inches apart. Bake for 9-10 minutes, or until lightly golden at the edges.
- Allow the cookies to cool on the baking sheet for 3-4 minutes before transferring to a wire rack.

- Preheat oven to 350. Mix eggs, cake mix and oil together until well blended.
- Scoop a teaspoon of mix, roll lightly into a little ball onto lightly greased sheet pan. Bake for 8-10 minutes. Cool on wire rack. Frost, fill or decorate as desired.
- *Notes: Try Butter Pecan cake mix, then roll the balls in a mixture of powdered sugar and cinnamon. When you put them on the cookie sheet, flatten them into little patties with your fingertips, and only bake about 7-8 minutes. This will make them chewier. Try Dark Chocolate cake mix and 1/2 bag of chocolate chips. Try Carrot Cake mix with white chocolate chips. Can also fill them and make sandwich cookies or whoopie pies.
- Hint: To keep these cookies or any other cookies fresh for more than a day or two, just place a slice of fresh bread in the container with the cookies.
