SEVEN LAYER DINNER
This was and is my favorite casserole and I hope you will enjoy it as much as my family does. Great warmed up the next day.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Layer potatoes, carrots and onions in a large buttered casserole dish. Sprinkle the uncooked rice over the vegetables. Then add the peas (with liquid) and arrange the pork sausage on top of that. Dilute tomato soup with a can of water and pour over the sausage. Season with salt and pepper.
- Bake covered in a preheated oven for 1 hour, then uncovered for an additional hour.

Steps:
- Add ground beef and sliced onions to the insert pot of the Instant Pot. Using the Saute function, cook until beef is browned, breaking it apart with a spoon or spatula as it cooks.
- Once beef is browned, drain excess grease and set aside.
- Add sliced potatoes to the bottom of the insert pot. Sprinkle potatoes with 1 tsp of Montreal steak seasoning.
- Top potatoes with beef and onions. Add tomatoes and peppers on top of the beef. Sprinkle with remaining 1 tsp steak seasoning plus the ground thyme.
- Pour in the beef broth. Close the lid and set vent to the sealed position.
- Select a cook time of 4 minutes at high pressure. Once the cook time is complete, perform a quick release of pressure.
- After the pressure has released and the valve has dropped, carefully remove the lid.
- If desired, add slurry of cornstarch and water to thicken the liquid to a gravy-like consistency.
- Serve, topped with shredded mozzarella if desired.

- In medium bowl, mix refried beans and salsa. On 12- or 13-inch serving plate or pizza pan, spread bean mixture in thin layer.
