8 ounces boneless skinless chicken breasts, cut into 1 pieces
1 1/2 ounces baby carrots, thinnly sliced
0.5 (3 ounce) bell peppers, chopped
1 teaspoon garlic, minced
3 ounces celery, chopped
3 ounces snap peas, cut in half width-wise
1 teaspoon cornstarch
1/2 cup pineapple in juice, undrained
2 tablespoons light soy sauce
1 1/2 teaspoons cider vinegar
1/2 teaspoon ground ginger
1 1/2 teaspoons Splenda sugar substitute

Steps:

  • Spray a non-stick skillet with cooking spray and saute the garlic for about 2 minutes.
  • Add the chicken and brown over medium heat.
  • Add the carrots, bell peppers, pea pods and celery, and stir fry for about 5-7 minutes (until the carrots soften a little bit).
  • In a small bowl, combine the soy sauce and cornstarch; mix. Pour into the skillet, along with the vinegar, pineapple, Splenda and ginger. Stir well and bring to a boil.
  • Reduce the heat and simmer for about 1-2 minutes (until the sauce thickens).
  • Serve over hot rice, rice noodles or cabbage. (NOT CALCULATED INTO POINTS).

3 tablespoons soy sauce
1 tablespoon sherry wine
1 egg
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/4 cup cornstarch
1 lb boneless skinless chicken breast, cut into 1-inch pieces
2 cups vegetable oil
1 (15 ounce) can pineapple chunks, undrained
2 tablespoons cornstarch
1/2 cup sugar
1/4 cup catsup
1/4 cup vinegar
1 tablespoon soy sauce
1 medium green pepper, cut into 1-inch pieces
hot cooked rice

Steps:

  • Mix together first 6 ingredients.
  • Add chicken; coat well.
  • Heat oil in electric skillet to 375 degrees.
  • Fry chicken until lightly browned.
  • Removed chicken; drain.
  • Drain pineapple, reserving liquid.
  • Add enough water to juice to make 1 cup.
  • Add 2 T. cornstarch, mixing well.
  • Combine pineapple juice mixture and next 4 ingredients in a medium saucepan.
  • Bring mixture to a boil.
  • Stir green pepper and chicken into sauce; cook until thoroughly heated.
  • Serve over rice.

1 (16 ounce) bottle fat-free French dressing
1 (8 ounce) jar no-sugar-added apricot jam
1 (4 ounce) packet Lipton Onion Soup Mix
1 (6 ounce) can pineapple chunks in juice
2 (4 ounce) raw chicken breasts (or more if you would like)
1 green pepper
2 cups brown rice

Steps:

  • Combine all ingredients except rice in a crock pot. Leave in crockpot until chicken is fully cooked. Serve over brown rice. it is AWESOME.

3 lbs roasting chickens, cut up
1 tablespoon vegetable oil or 1 tablespoon olive oil
1/2 cup sliced celery
1 bell pepper, cut into chunks (any color)
1 (20 ounce) can pineapple chunks, drained and juice reserved
1 cup reserved pineapple juice (add water if necessary)
1/4 cup brown sugar
1/2 cup vinegar
2 tablespoons soy sauce
1 tablespoon ketchup
1/2 teaspoon Worcestershire sauce
1/4 teaspoon ground ginger
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Heat oil in a 4 or 6-quart pressure cooker.
  • Brown chicken a few pieces at a time; set aside.
  • Return all chicken to pressure cooker; add celery and green pepper.
  • Combine pineapple juice, brown sugar, vinegar, soy sauce, ketchup, Worcestershire sauce, and ginger; pour over chicken.
  • Close pressure cooker cover securely.
  • Place pressure regulator on vent pipe.
  • Cook for 8 minutes, at 15 pounds pressure, with regulator rocking slowly.
  • Cool pressure cooker at once (cold water method).
  • Remove chicken and vegetables to a warm platter.
  • Mix cornstarch with cold water; blend into hot liquid.
  • Cook and stir until mixture boils and thickens.
  • Add pineapple chunks and heat.
  • Pour sauce over chicken.
  • Serve with rice.

2 tablespoons honey
2 teaspoons toasted sesame oil
1 teaspoon fresh ginger, grated
8 skinless chicken drumsticks
3 tablespoons sesame seeds

Steps:

  • Mix together soy sauce, honey, sesame oil, and ginger in a gallon zip lock bag.
  • Add chicken drumsticks, squeeze out air, and seal the bag. Turn chicken to coat and let marinate for 2-24 hours in refridgerator.
  • Preheat oven to 400. Line roasting pan with foil and spray with nonstick spray.
  • Spread sesame seeds on plate.
  • Remove chicken from marinade. Discard leftover marinade. Dip each drumstick in the sesame seeds to coat on one side.

3 tablespoons all-purpose flour
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
1 pound skinless, boneless chicken breast halves, cut into 1-inch cubes
3 tablespoons vegetable oil, divided
3 celery ribs, sliced
2 green bell peppers, diced
1 onion, chopped
½ cup ketchup
½ cup lemon juice
½ cup crushed pineapple with syrup
⅓ cup packed brown sugar

Steps:

  • Combine flour, garlic powder, salt, and black pepper in a shallow dish.
  • Roll and coat chicken cubes in flour mixture.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.
  • Cook and stir chicken in hot oil until not longer pink in the center and juices run clear, 8 to 10 minutes; remove and set aside.
