3 pound cooked chicken breasts (boneless and skinless (about 1 ))
8 ounce enchilada sauce
2 cups marble cheddar cheese
10 medium whole wheat tortillas
hot sauce
sour cream
chives
guacamole

Steps:

  • Preheat oven at 400 F degrees. Spray a 9x13 inch baking dish with cooking spray and set aside.
  • In a medium size bowl shred the chicken breast. You can also chop it up in small pieces.
  • Add the enchilada sauce and the cheese and stir everything together until well incorporated.
  • Lay a tortilla flat and top with a couple tablespoons of the chicken mixture. Tightly roll up the tortilla and place it in the baking dish. Repeat with remaining ingredients.
  • Spray the taquitos with more cooking spray. Alternatively, you could brush with melted butter.
  • Bake for about 15 minutes or until tortillas turn golden brown. If you want crispier taquitos, place under the broiler for 1 or 2 minutes.
  • Serve with any of the optional toppings and enjoy!

1 box 20 count frozen taquitos, beef or chicken (($4.98))
1 small can enchilada sauce, red or green (($1.68))
8 ounces shredded cheese, Mexican blend, cheddar, or Monterey Jack (($1.98))

Steps:

  • Preheat your oven to 350 degrees F.
  • Grease the inside of a 9x13 baking dish.
  • Lay your frozen taquitos down in the pan so that they all fit in a single layer.
  • Spray the tops of the taquitos with cooking spray.
  • Bake for 10 minutes and remove from oven.
  • Top with the sauce, spreading it evenly over the tops of the taquitos, and then sprinkle the cheese on top.
  • Bake in the oven for an additional 10 min.
  • Serve topped with shredded lettuce, diced tomato, sour cream, cilantro, etc.

The easiest chicken "enchiladas" you'll ever make! No mess, easy prep & delicious. Please note: this recipe calls for THAWED flour taquitos. I've never made this using frozen taquitos, so I don't have any idea how to adjust for the frozen cooking time.

16-18 ct pkg thawed flour chicken taquitos or thawed flour chicken & cheese taquitos
10 oz green enchilada sauce, your favorite brand and heat level
4-8 oz sour cream (depending on how much you like sour cream - we just use what's left in the container)
1 c shredded cheese (cheddar or mexican blend)

Steps:

  • 1. Preheat oven to 450°.
  • 2. Stir together green enchilada sauce & sour cream until well combined.
  • 3. Coat the bottom of a 9x9 OR 9x13 baking dish (depending on the number of taquitos you're using) with the sauce; arrange the THAWED taquitos side-by-side in the baking dish in ONE layer.
  • 4. Evenly pour the remaining sauce over the taquitos.
  • 5. Bake for 20-25 minutes or until the sauce is bubbling around the edges of the dish; sprinkle with cheese and bake another 3-5 minutes (or until melted).

It was a lazy day and I didn't feel like going to the store, but the family wanted enchiladas. I didn't have any tortillas nor any chicken defrosted so I started looking in my freezer and fridge to see what I could come up with.. That is when I saw the taquitos and a Star was born!

1 can(s) 14.5 oz mild red enchilada sauce
1 can(s) 10.75 oz cream of mushroom soup
8 oz shredded cheddar cheese

Steps:

  • 1. Preheat oven to 375 degrees F (190 degrees C).
  • 2. Grease a 9x13-inch baking dish.
  • 3. Arrange taquitos in the prepared baking dish.
  • 4. Blend enchilada sauce and cream of mushroom soup together smooth; Pour over taquitos

¼ cup shredded Cheddar cheese
5 drops hot pepper sauce (such as Tabasco®)
12 corn tortillas

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Combine the chicken and cheese in a bowl; stir in the hot pepper sauce. Warm the tortillas one at a time in a skillet over medium heat until flexible about 10 seconds per side.

1 (20-oz.) can red enchilada sauce
1 (20.0-oz) box José Olé® Shredded Steak Taquitos or 1 (22.5-oz) Chicken & Cheese Taquitos, partially thawed
1 1/2 cups shredded 3-cheese Mexican blend, divided
1 (16-oz.) can refried beans, heated
1/3 cup each: sliced green onions and diced red onions (combined)
1 (2.25-oz.) can sliced black olives, drained (optional)
Sour Cream (optional)

Steps:

  • Preheat oven to 375°F. Pour 1/3 of the enchilada sauce into a lightly greased 11x7x2-inch baking dish. Arrange 1/2 of the José Olé® Taquitos over enchilada sauce. Evenly spread heated refried beans over taquitos. Layer 1/3 more sauce, 1/2 the onion mixture and 1/2 the shredded cheese. Top with remaining taquitos and enchilada sauce. Bake, covered, for 25 minutes or until heated through. The last 5 minutes of baking, top with remaining cheese. Garnish with onions and olives. Serve with sour cream if desired.
