STUFFED RANCH BURGERS WITH CITRUS SLAW



Stuffed Ranch Burgers with Citrus Slaw image

Number Of Ingredients 14

1 1/2 lbs. 80/20 Ground Beef
1/2 C Kraft Ranch Dressing
1 C Velveeta Shredded Cheese
Kosher Salt
Cracked Black Pepper
6 Large Hamburger Buns
6 Slices Kraft Natural Cheese
1 Large Tomato
1/2 Head of Cabbage
3 Tbsp. Extra Virgin Olive Oil
Juice from 1 Lime
Handful of Fresh Cilantro
Kosher Salt to Taste
Cracked Pepper to Taste

Steps:

  • Take the cabbage and slice it into 1/4 inch rings, then chop into fine strips. Place in a large bowl, add the olive oil and lime juice, then tear the cilantro with your fingers and toss in the bowl as well as a heaping pinch of salt and pepper. Mix thoroughly, adjusting the salt and pepper to taste. Cover and place in the fridge until the burgers are ready to be plated.
  • Place the beef in a large bowl and cover with the ranch dressing, then mix until the two are fully incorporated. Separate the beef into 6 balls, about 1/4 lb. each, then press a deep indentation into the center of the ball, creating a bowl. Place a heaping tablespoon of shredded cheese into the indention, then pull the edges together to seal the beef over the cheese. Press down gently with your hand to flatten out the patties. Generously salt and pepper each patty.
  • Prepare a grill at high heat, brush the grate down with oil and grill each burger for 3 minutes on one side before flipping, then another 3 minutes for medium rare, and around 6-8 minutes for well done.
  • Top each burger with a slice of cheese before removing from the grill, then place on a bun layered with ranch dressing and tomato, top with the citrus slaw and top bun and enjoy!

1 ½ cups cheddar cheese, shredded
½ cup bacon, cooked, cut into pieces
2 jalapeñoes, minced
½ cup ranch dressing
2 lb ground beef
1 teaspoon salt
2 teaspoons pepper
6 burger buns
12 pieces lettuce

Steps:

  • Combine cheese, bacon pieces, jalapeños, and ranch in a bowl. Stir together and refrigerate.
  • Season the ground beef with salt and pepper in a large bowl, and mix in with your hands.
  • Grab a baseball-sized piece of beef. Roll it with your hands into a ball and place on a parchment lined baking tray.
  • Using a clean, empty soda or beer can, press the ball of beef around the can to create a bowl. Make sure to smooth out any cracks.
  • Fill the bowls with the cheddar mixture and refrigerate for 2 hours.
  • Preheat the grill to 350˚F (175˚C).
  • Cook burger bowls over indirect heat for 25-30 minutes.
  • Serve with or without a bun with your favorite toppings.

These individually wrapped burgers are great to take along to picnics, cookouts or camping trips. The cheese is already stuffed inside, so all you need are your buns and condiments.

1 1/2 pounds ground beef
4 ounces Cheddar, cut into 16 small cubes
Kosher salt and coarsely ground black pepper
1/3 cup ketchup
2 tablespoons Worcestershire sauce
4 seeded hamburger buns, split and toasted
4 small leaves romaine lettuce
4 slices sweet onion, such as Vidalia or Maui
1 small vine-ripened tomato, sliced into 4 rounds
Potato chips or French fries, for serving

Steps:

  • 1. Preheat a grill over high heat. Divide the meat into four 6-ounce balls. Press 4 small cubes of cheese into the center of each ball and flatten into a 1/2-inch-thick patty about 4 inches in diameter, making sure the cheese stays wrapped in the meat. Sprinkle both sides of the patties evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Wrap each burger in a piece of nonstick aluminum foil, twisting any excess foil at each end so the burger is wrapped in a single layer of foil only. Mix the ketchup and Worcestershire together in a small bowl.
  • 2. Grill the burgers for 5 minutes per side. Remove from the grill and carefully open up the foil packets, allowing the steam to escape. Place the opened foil packets back on the grill, add a spoonful of sauce to the top of each patty and continue to cook until the patty is cooked to at least medium to allow the cheese inside to fully melt, another 4 to 6 minutes.
  • 3. On the bottom half of each bun, spread a bit of sauce and top with a lettuce leaf, onion slice and tomato slice. Top with a patty, another spoon of the remaining sauce and the top of the bun. Serve with chips or fries.

2 lbs ground beef
1 tablespoon Worcestershire sauce
1 cup breadcrumbs
1 egg
1 teaspoon salt
1 teaspoon pepper
1 chopped garlic clove
1/2 cup chopped onion
4 slices bacon (or one slice per burger)
1/2 cup ranch dressing
4 slices cheddar cheese (cut into small chunks)

Steps:

  • Cook bacon in large pan until crispy.
  • Remove bacon and crumble into lil bits. Set aside in bowl. Reserve the grease for the burgers.
  • In a large bowl combine hamburger, Worcestershire sauce, bread crumbs, egg, salt, pepper, garlic, and onion.
  • Mix until all ingredients are combined.
  • Form big hamburger patties.
  • With your thumbs make a hole in the center of the burger add a teaspoon of ranch, then cheese, then bacon.
  • Using your fingers fold in the rest of the burger from the sides to the middle, to form the patty.
  • cook on medium high heat in the bacon grease for 5 minutes on each side.
  • turn down the heat to medium and cook 10-15 minutes longer or until juices run clear.

24 large white mushrooms
12 cremini mushrooms
12 slices bacon
1/2 cup cream cheese
1 cup gruyere or 1 cup swiss cheese, grated
1/2 cup parmesan cheese, grated -separated
1/2 cup shallot, finely chopped
2 -3 garlic cloves
1 teaspoon thyme
1/8 teaspoon cayenne pepper
1 tablespoon olive oil

Steps:

  • cook and crumble the bacon.
  • remove stems from the large mushrooms.
  • chop stems and cremini mushrooms.
  • sautee shallots and garlic in olive oil until tender.
  • add chopped mushrooms,thyme and cayenne and sautee until tender.
  • stir in cream cheese until melted through.
  • mix in crumbled bacon.
  • add grated gruyere and half of the parmesan, mix thouroughly until melted through.
  • spoon mixture into large mushrooms.
  • sprinkle remaining parmesan on top.
  • place on a baking sheet and bake at 350 for approx 15 minutes.

1/2 cup crushed saltines (about 15 crackers)
1 large egg

2 pounds ground beef
1-1/2 cups shredded cheddar cheese
1 jar (4-1/2 ounces) sliced mushrooms, drained
3 tablespoons cream cheese, softened
6 kaiser rolls, split

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into twelve thin patties., Combine the cheddar cheese, mushrooms and cream cheese; spoon onto centers of six patties. Top with remaining patties; press edges firmly to seal., Grill burgers, covered, over medium heat or broil 4 in. from heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear.
