3-2-1 CAKE

3-2-1 Cake image

3 ingredients, microwavable, GOOD! I found this recipe somewhere, but I go to SO many recipe sites, I can't remember where. This is a VERY easy, VERY good, VERY quick, single serve cake! Your choice of flavors. I prefer Chocolate! The 3-2-1 comes from 3 tablespoons cake mix, 2 tablespoons water and 1 minute in the microwave. You can make it a little bigger by adding more cake mix and a little more water to cake battter consistency. I made this for the hubby and he loved it! Going to try other flavor cake mixes with it too. Made the chocolate cake and topped it with sliced sugared strawberries! Whipped cream, ice cream and toppings, even icing would be good toppers!

Time 1h

Yield 12

Number Of Ingredients 8

1 (18.25 ounce) package pineapple flavored cake mix
¼ cup vegetable oil
1 (21 ounce) can strawberry pie filling
2 eggs
½ cup water
1 (8 ounce) can crushed pineapple with juice
1 (3.5 ounce) package instant vanilla pudding mix
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In prepared pan, combine cake mix, oil, eggs, and water. Stir together until cake mix is moistened, breaking up any large lumps in the batter and spreading to cover bottom of pan. Spoon on pie filling to form strips evenly spaced over batter, but not too close to edge of pan. Gently fold batter over pie filling, creating a swirl pattern and spreading out to form an even layer.
  • Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • For the topping: Mix together the crushed pineapple and instant pudding. Refrigerate for 5 minutes, or until thickened. Fold in whipped topping, then spread over cooled cake. Keep refrigerated until ready to serve.

Number Of Ingredients 8

4 eggs, separated
1 cup milk
3 cups cake flour (sift and then measure)
4 teaspoons baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsweetened butter, softened
2 cups sugar
1 teaspoon vanilla

Steps:

  • Stir baking powder and salt into cake flour.
  • In another bowl, beat butter and sugar until light and fluffy. Beat in the four egg yolks one at a time. Add the vanilla to the mixture.
  • Add the flour mixture and milk alternately, starting and ending with one third of the flour. Stir just until the flour is incorporated.

LEMON VELVET CREAM CAKE

Lemon Velvet Cream Cake image

The four layers of rich and velvety lemon cake in this spring dessert are impressive, but the real star of this citrusy stunner is the silky-smooth homemade frosting. Tucked between each tier and wrapped along the outside of the cake, one lick of the frosting taste and you'll quickly understand why this lemon velvet cake is so popular. The satiny spread is made from a combination of cream cheese and whipping cream, sweetened with powdered sugar and grated lemon peel. The tangy flavor of the luxurious frosting paired with the moist lemon velvet cake base is what makes this showstopper a popular fan-favorite.

Number Of Ingredients 8

1 box Betty Crocker™ Super Moist™ lemon cake mix
Water, vegetable oil and eggs called for on cake mix box
3 oz cream cheese, softened
1 tablespoon milk
1 tablespoon grated lemon peel
2 cups whipping cream
2/3 cup powdered sugar
Lemon twist, if desired
