Tuna Noodle Casserole combines flaky tuna and tender egg noodles in a cheesy creamy sauce.

3 cups egg noodles
1 tablespoon butter
1 small onion (diced)
2 stalks celery (diced)
⅔ cup frozen peas (defrosted)
1 can tuna (5-6 ounces, drained)
10 ½ ounces condensed mushroom soup
⅓ cup milk
1 cup cheddar cheese
1 tablespoon parsley
½ cup panko bread crumbs
1 tablespoon butter (melted)
½ cup cheddar
1 tablespoon parsley

Steps:

  • Preheat oven to 425°F. Combine topping ingredients and set aside.
  • Boil noodles al dente according to package directions. Drain and rinse under cold water.
  • Cook onion and celery in butter until tender, about 5-7 minutes.
  • In a large bowl combine noodles, onion mixture, peas, soup, milk, cheese, tuna and parsley. Mix well.
  • Spread into a 2qt casserole dish and top with crumb topping.
  • Bake 18-20 minutes or until bubbly.

1 (12 ounce) package egg noodles
¼ cup chopped onion
2 cups shredded Cheddar cheese
1 cup frozen green peas
2 (5 ounce) cans tuna, drained
2 (10.75 ounce) cans condensed cream of mushroom soup
½ (4.5 ounce) can sliced mushrooms
1 cup crushed potato chips

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
  • Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.

1 (12 ounce) package extra wide egg noodles
1 cup frozen green pea
1 (6 ounce) can light chunk tuna in water, drained
2 tablespoons sweet butter
3 tablespoons all-purpose flour
1 3/4 cups chicken broth
1 (12 ounce) can evaporated milk
1/4 cup dry white wine

Steps:

  • In a 5- to 6-quart pan, bring 3 quarts of salted water to a boil over high heat. Add noodles; cook according to package directions. Add peas to pasta and cook until peas are bright green and tender to bite, about 1 minute. Drain noodles and peas; then return to pan. Blend in tuna.
  • While noodles cook, in a 12- to 14-inch frying pan, melt butter over medium-high heat. Add flour and whisk vigorously until a smooth paste forms; stir mixture until it simmers, about 1 minute. In a bowl, mix together broth and milk. Very gradually, add this mixture in small batches to frying pan, whisking vigorously after each addition until smooth. Add wine and cook until sauce simmers and thickens, about 2 minutes.
  • Pour sauce over tuna-noodle mixture and gently stir to mix well. Serve immediately.
