1 (29-ounce) can tomato sauce
1 (14.5-ounce) can diced tomatoes, drained
1 (15-ounce) can chili beans (pinto beans in chili sauce), not drained
1 (15-ounce) can red kidney beans, drained and rinsed
1 cup frozen sliced or chopped carrots
1 cup frozen sweet corn kernels
2 bell peppers (different colors), chopped
1 large onion, chopped
1 to 3 canned chipotle peppers in adobo sauce, chopped, sauce reserved
2 teaspoons chopped garlic
1 teaspoon chili powder
1 teaspoon ground cumin
1 pound raw lean ground turkey
Salt

Steps:

  • Combine all of the ingredients except the turkey and salt in a large bowl. Add 2 teaspoons of adobo sauce from the canned chipotle peppers. Mix to combine and coat all of the beans and veggies with sauce.
  • Put the turkey in the bottom of the crock pot and break it up into small chunks. Pour the chili mixture on top and mix.
  • Cover and cook on high for 3 to 4 hours or on low for 7 to 8 hours. Stir to distribute the turkey. Add salt, to taste.

This is a very simple and hearty chili with plenty of flavor. It's even better the second day! I serve this with lowfat Cheddar cheese and lowfat sour cream. It's also delicious with crackers.

1 ½ teaspoons olive oil
1 pound ground turkey
1 onion, chopped
2 cups water
1 (28 ounce) can canned crushed tomatoes
1 (16 ounce) can canned kidney beans - drained, rinsed, and mashed
1 tablespoon garlic, minced
2 tablespoons chili powder
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon ground cayenne pepper
½ teaspoon ground cumin
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
  • Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

This recipe is a take off of the famous 2 alarm chili. I adjusted a few of the ingredients to make it healthier! If you purchase the 2 alarm chili package, most of the ingredients are there. I leave out the masa to not add the calories and carbs. I also like mine a bit sweet so I add some cooking Splenda. Hope you enjoy!

2 lbs lean ground turkey
1 (14 1/2 ounce) can chili beans
1 (15 1/2 ounce) can chili-ready tomatoes
1/2 cup chili pepper
1 tablespoon paprika
1/2 tablespoon cumin
1/2 tablespoon oregano
1 tablespoon red pepper (cayenne)
1/2 tablespoon salt
1 tablespoon seasoning salt
1/8 cup garlic, and onion blend (dried)
1/4 cup Splenda granular
2 1/2 cups water

Steps:

  • Brown turkey meat in skillet, then drain. You can purchase the 2 alarm chili package and most of the dry ingredients are there. Combine meat, beans, tomatoes, water, and dry ingredients. Simmer on medium heat for approximately 20 minutes.

1 1/2 tablespoons cooking oil
1 tablespoon paprika
3/4 tablespoon cumin
2 large cloves garlic, sliced
3/4 tablespoon salt
3/4 tablespoon black pepper
1 1/2 tablespoons cornstarch
3/4 tablespoon dried leaf oregano
4 tablespoons coarsely chopped sweet white onions
4 tablespoons coarsely chopped green chilies
1 (14 ounce) can whole stewed tomatoes
2 whole chipotle peppers in adobo sauce
1 cup fresh corn
1 cup finely chopped zucchini
1 cup chicken stock

Steps:

  • Preferably using a cast-iron skillet, brown the turkey in the oil for 2 1/2 to 3 minutes. Add all the ingredients except the vegetables and chicken stock, and saute for 2 to 3 minutes. Add the vegetables and stock, and cook for approximately 5 to 10 minutes. Adjust seasoning to taste, and serve immediately;

I make this all the time, especially in the winter. This is adapted from a mix we used to buy, but can't find anymore. I tweaked it for use in the crock pot, but it can me made on the stovetop as well. We serve ours over rice with cheddar cheese sprinkled on top, yum!

1 (15.5 ounce) can canned chili starter (such as BUSH'S Chili Magic®)
2 tablespoons dried oregano
2 cups chicken broth

1 green bell pepper, chopped
1 jalapeno pepper, minced

Steps:

  • Coat a large saucepan with cooking spray and cook 1 chopped sweet onion over medium heat until tender, about 5 minutes. Add chili starter, oregano, and chicken broth; increase heat to medium-high and simmer for 20 minutes.
  • Coat a large stock pot with cooking spay and cook remaining 1/2 chopped sweet onion, green bell pepper, and jalapeno pepper over medium heat until tender, 5 to 8 minutes. Add ground cumin, cocoa powder, chili powder, garlic salt, paprika, and cayenne pepper; cook 2 minutes. Mix in ground turkey and pork; cook and stir until meat is crumbly, evenly browned, and no longer pink, about 10 more minutes. Drain and discard any excess grease.

1 (8 ounce) can tomato sauce
2 cups water
2 teaspoons paprika
4 teaspoons cumin
1 tablespoon dried onion flakes
1/4 teaspoon garlic salt
1/2 cup chili powder
1 teaspoon ground red pepper
2 tablespoons masa harina flour
1/4 cup hot water

Steps:

  • Brown beef in a Dutch oven; drain.
  • Add tomato sauce, 2 cups water, paprika, cumin, onion flakes, garlic salt, chili powder, and ground red pepper.
  • Cover and simmer for 30 minutes, stirring occasionally.
  • Dissolve 2 tablespoons masa into 1/4 cup hot water to make a thick, but flowable mixture.
  • Add masa mixture to chili.
  • Cover and simmer another 15-20 minutes.

You might not think of chili as an easy weeknight dish, but this turkey version from Pierre Franey will change your mind. It's fabulous, it's healthy and it can be ready in about a half hour. A combination of dark and white meat really adds depth and richness of flavor, so try to find a mix, but all white meat (or a mixture of ground beef and turkey) will yield a stellar batch too.

1 tablespoon olive oil
2 pounds ground turkey, white and dark combined
2 cups coarsely chopped onions
2 tablespoons chopped garlic
1 large sweet red pepper, cored, deveined and coarsely chopped
1 cup chopped celery
1 jalapeno pepper, cored, deveined and finely chopped
1 tablespoon fresh oregano, chopped, or 1 tablespoon, dried
2 bay leaves
3 tablespoons chili powder
2 teaspoons ground cumin
3 cups canned diced tomatoes
2 cups chicken broth, fresh or canned
Salt and freshly ground pepper to taste
2 15-ounce cans of red kidney beans, drained
2 cups shredded cheddar cheese
1 cup sour cream (optional)
Sliced lime for garnish (optional)

Steps:

  • Heat the oil over high heat in a large heavy pot and add the turkey meat. Cook until lightly browned, about 5 minutes, chopping down and stirring with the side of a heavy kitchen spoon to break up any lumps.
  • Add the onions, garlic, sweet pepper, celery, jalapeno pepper, oregano, bay leaves, chili powder and cumin. Stir to blend well. Cook for 5 minutes.
  • Add the tomatoes, chicken broth, salt and pepper. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.
  • Add the drained beans and cook, stirring occasionally, for 10 minutes longer. Serve in bowls with cheddar cheese, and sour cream and lime wedges, if desired.
