This Ham and Lentil Soup recipe is perfect for chilly weather and cooks up in about an hour; all you need is a loaf of French bread for a cozy winter's feast. Put your leftover ham to work and make it on the stove, in a pressure cooker, or in your crockpot!

1 tablespoon olive oil
1 cup carrots (sliced (2-3 carrots))
1 cup celery (sliced (2-3 ribs))
1 large onion (chopped (2 cups))
4 cups chicken broth
4 cups water
1 pound dried lentils (picked over, rinsed, stones discarded)
1 meaty ham bone (or ham hock)
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon dried thyme
1 bay leaf
Salt and freshly ground black pepper
additional cooked ham (chopped (optional))
fresh parsley (minced, for garnish (optional))

Steps:

  • In a 3-quart saucepan or Dutch oven, heat olive oil over medium-high heat until shimmering. Sauté carrots, celery, and onion until softened and translucent, about 5 minutes.
  • Stir in broth, water, lentils, ham bone, garlic powder, cumin, paprika, thyme, and bay leaf. Bring to a boil. Simmer until lentils are tender, 45 minutes to 1 hour.
  • Remove ham bone and bay leaf. Chop ham from bone and return to pot. Add additional leftover ham, if using, and cover until heated through, about 5 minutes. Season to taste with salt and pepper and garnish with parsley if desired.
  • In a 3-quart pan or Dutch oven, heat olive oil over medium-high heat until shimmering. Sauté carrots, celery, and onion until softened and translucent, about 5 minutes.
  • Stir in broth, water, lentils, ham bone, garlic powder, cumin, paprika, thyme, and bay leaf. Bring to a boil. Pour into slow cooker. Heat on HIGH for 3 to 4 hours, LOW for 6 to 8 hours, or until lentils are tender.
  • Remove ham bone and bay leaf. Chop ham from bone and return to slow cooker. Add additional leftover ham, if using, and cover until heated through, about 5 minutes. Season to taste with salt and pepper and garnish with parsley if desired.
  • Press the Sauté button on your Instant Pot and heat olive oil until shimmering. Sauté carrots, celery, and onion until softened and translucent, about 5 minutes.
  • Stir in broth, water, lentils, ham bone, garlic powder, cumin, paprika, thyme, and bay leaf. Secure the lid, close the pressure valve, and cook at high pressure for 35 minutes.
  • Allow the pressure to release naturally. Remove ham bone and bay leaf. Chop ham from bone and return to Instant Pot. Season to taste with salt and pepper and garnish with parsley if desired.

1 meaty ham bone
6 cups water
1-1/4 cups dried lentils, rinsed
1 can (28 ounces) diced tomatoes, undrained
2 to 3 carrots, sliced
2 celery ribs, sliced
1/4 cup chopped green onions
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/8 teaspoon pepper
12 ounces bulk pork sausage, cooked and drained
2 tablespoons chopped fresh parsley

Steps:

  • In a Dutch oven, bring ham bone and water to a boil. Reduce heat; cover and simmer for 1-1/2 hours. , Remove ham bone. To broth, add the lentils, tomatoes, carrots, celery, onions and seasonings; bring to a boil. Reduce heat; cover and simmer until lentils and vegetables are tender, 30-40 minutes., Meanwhile, remove ham from bone; coarsely chop. Add the ham, sausage and parsley to soup; heat through.

2 tablespoons olive oil
2 cups small diced onions
1 cup small diced celery
1 cup small diced carrots
Salt
Freshly ground black pepper
2 tablespoons chopped garlic
2 bay leaves
6 sprigs of fresh thyme
2 quarts chicken stock
3 to 4 smoked ham hocks
1 pound orange lentils
2 tablespoons chopped parsley

Steps:

  • In a large saucepan, over medium heat, add the oil. When the oil is hot, add the onions, celery, and carrots. Season with salt and pepper. Saute for 4 minutes. Add the garlic, bay leaves and thyme. Saute for 1 minute. Add the ham hocks and stock. Bring the liquid to a boil, reduce the heat to medium-low and cook about 1 hour, or until the hocks are tender. Add the lentils and continue cook for 25 to 30 minutes or until the lentils are tender. Remove from the heat and stir in the parsley. Reseason with salt and pepper if needed. Remove the ham hocks and remove the meat. Add the ham back into the soup. Ladle the soup into individual serving bowls and serve with crusty bread.

1 lb dry lentils, rinsed
6 -8 ounces smoked ham, diced
10 cups water
1 1/2 tablespoons ham soup base or 3 ham bouillon cubes
3/4 cup celery, diced
3/4 cup onion, diced
3/4 cup carrot, diced
1 tablespoon cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon oregano flakes
1 teaspoon salt
1 teaspoon ground black pepper
Tabasco sauce, a few drops (optional)
liquid smoke, a few drops (optional)

Steps:

  • In a stock pot, combine lentils, ham, water and base/bouillon and bring to a boil.
  • Reduce heat; simmer until lentils are tender, about 30 minutes.
  • Add remaining ingredients; simmer until veggies are tender, about 20 minutes.
  • If you wish to puree: remove 3 cups of lentils, broth and veggies (keep diced ham in soup pot); puree, return to soup and stir.
  • For the crockpot: place all ingredients in a slow cooker and cook on LOW for about 10 hours; follow step #4 prior to serving.

I recently found this recipe on the Food TV website and have not tried it yet. It is one of Emeril's recipes.

2 tablespoons olive oil
2 cups onions, diced small
1 cup celery, diced small
1 cup carrot, diced small
salt
fresh ground black pepper
2 tablespoons garlic, chopped
2 bay leaves
6 sprigs fresh thyme
2 quarts chicken stock
3 -4 ham hocks
1 lb orange lentils
2 tablespoons parsley, chopped

Steps:

  • In a large saucepan, over medium heat, add the oil. When the oil is hot, add the onions, celery and carrots. Season with salt and pepper. Saute for 4 minutes. Add the garlic, bay leaves and thyme. Saute for 1 minute. Add the ham hocks and stock. 1 1/2 cups diced smoked ham
2 teaspoons dried savory
1 1/2 teaspoons dry mustard
3 cups (or more) canned low-salt chicken broth
1 cup brown lentils, rinsed
1 14 1/2-ounce can diced tomatoes with roasted garlic

Steps:

  • Heat oil in heavy large saucepan over medium-high heat. Add ham, savory and mustard and stir until ham begins to brown, about 2 minutes. Add 3 cups broth and lentils and bring to boil. Reduce heat to medium, cover and simmer until lentils are tender, about 20 minutes. Add tomatoes with juices; simmer uncovered 2 minutes. Add more broth by 1/4 cupfuls to thin soup, if desired. Season with salt and pepper.

1/2 pound lean country smoked ham
3 medium-size carrots
1/2 pound green lentils
2 tablespoons butter
1 cup finely chopped onions
1 tablespoon finely chopped garlic
2 tablespoons curry powder
5 cups fresh chicken broth or canned
2 cups water
1 bay leaf
3 sprigs fresh thyme or 1 teaspoon dried
Salt to taste
1 tablespoon red-wine vinegar
2 tablespoons finely chopped coriander

Steps:

  • Remove most of the fat from the ham and cut into 1/2-inch cubes.
  • Trim and scrape the carrots and cut them into 1/4-inch cubes.
  • Pick over the lentils, wash them and drain into a colander.
  • Heat 1 tablespoon of the butter in a kettle or saucepan. Add the ham, carrots, onions, garlic and curry powder. Cook briefly over medium heat, stirring, until the onions are wilted.
  • Add the lentils, 4 cups of the chicken broth, water, bay leaf, thyme and salt. Bring to a boil, and simmer for 24 to 30 minutes, stirring occasionally.
  • Remove one cup of the soup, with more lentils than liquid, and set aside. Discard the bay leaf and thyme sprigs.
  • With a potato masher or wire whisk stir the soup briskly to mash the lentils, and return the soup to a boil. Add the remaining cup of chicken broth, the reserved lentils, the vinegar and the remaining butter. Check for seasoning and serve, sprinkled with the coriander.
