Blackberry Jam Yummies image

Makes 1 - 8x8 pan (16 servings)

3 tablespoon(s) butter, room temperature
1/2 cup(s) sugar
1 large egg
1 1/2 cup(s) flour
1/2 teaspoon(s) salt
1 teaspoon(s) baking soda
1/2 tablespoon(s) cinnamon, ground
1 pinch(es) nutmeg
2 tablespoon(s) vinegar
1/3 cup(s) cranberry juice
1/4 cup(s) blackberry jam, seedless
1-1/4 cup(s) blackberries (fresh or frozed, thawed)

Steps:

  • Preheat oven to 325 and lightly grease one 8X8 pan.
  • Beat butter and sugar together until fluffy... add egg and mix well.
  • Combine flour, salt, soda, cinnamon, and nutmeg in separate bowl.
  • Add the flour mixture to the sugar mixture, then stir in vinegar and juice.
  • Fold in blackberry jam and berries.
  • Pour batter into pan and bake at 325 for 35-40 minutes.
  • Let pan cool and cut into squares.
