Blackberry Jalapeno Glazed Ham image

Number Of Ingredients 10

2 Fresh jalapenos
12 ounces Fresh blackberries
1 cup Water
1/2 cup Brown sugar
1/4 cup Honey
1/4 cup Orange juice
1/4 cup Orange-flavored liqueur
1 tablespoon Garlic, minced
2 teaspoons Orange zest
12 pound Spiral-sliced fully cooked ham

Steps:

  • Set oven rack 6 inches from the heat source & preheat the broiler to high. Place jalapenos on a baking sheet. Broil, turning every 2-3 minutes until skin is blackened & blistered, 8-10 minutes.
  • Remove from oven & place in a resealable plastic bag; set aside for 5-10 minutes. Remove jalapenos & let sit until easily handled. Peel the blackened skin from the peppers, slice open, remove the seeds & mince the pepper. Reduce oven temperature to 325.
  • Combine jalapenos, blackberries, water, brown sugar, honey, orange juice, orange zest, orange-flavored liqueur & garlic in a saucepan over medium heat; simmer for 5-10 minutes. Reduce heat to low & continue simmering until glaze has reduced in size & is thickened, about 5-10 minutes. Remove saucepan from heat.
  • Place ham in a roasting pan & brush with some of the glaze; cover loosely with aluminum foil. Bake in the oven, basting with glaze every 20 minutes, until ham reaches 145 degrees, about 3 hours.
  • Remove ham from oven & brush with more glaze. Let stand 10 minutes before slicing.
