Black Beans and Greens image

Fresh and colorful veggies join black beans in this flavor-packed side-dish salad made with a hint of citrus - ready in just 10 minutes!

3 tablespoons fat-free Italian dressing
1/2 teaspoon grated lime peel
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
1 can (15 oz) black beans, drained, rinsed
3 1/2 cups mixed salad greens (about half of 10-oz bag)
1 medium tomato, cut into wedges
1/2 avocado, pitted, peeled and chopped (1/3 cup)

Steps:

  • In 1-cup measuring cup, mix dressing, lime peel, lime juice and cilantro.
  • In large bowl, toss beans, salad greens and tomato. Stir in dressing mixture until salad is coated. Top with avocado.
