Black Bean Soup image

This is a great, easy recipe for black bean soup. I have always loved black bean soup and have finally perfected my own version! You can add extra ingredients to your liking! Enjoy!

1 can(s) black beans (15 oz), drained
1 can(s) corn, drained
2/3 jar(s) hot salsa
1 can(s) green chiles, chopped (small can)
1 can(s) black beans (29 oz)
2 c chicken broth
3 clove garlic
olive oil
cumin
red pepper flakes, optional

Steps:

  • 1. In a large pot, saute garlic in olive oil. While garlic is cooking, puree half of the 29 oz can of black beans. (Do not drain this can.)
  • 2. Add chicken broth to the pot of garlic then stir in the pureed black beans.
  • 3. Add all remaining ingredients and stir well to combine. Bring soup to a low boil and then simmer for 20 minutes or so until you reach desired consistency.
  • 4. Top with cheese and serve with corn bread or tortilla chips. Enjoy!
