Bittersweet Chocolate Sorbet image

All of the wonderful bittersweet flavor and none of the heavy cream fat of ice cream. Also low in sugar, what could be better!

Number Of Ingredients 6

2 c water
1/2 c granulated sugar
1/2 c cocoa powder
1-2 pinch fine sea salt
2 oz bittersweet chocolate, chopped
1 tsp pure vanilla extract

Steps:

  • 1. Put all the ingredients, except vanilla, in a saucepan and bring to a boil, stirring occasionally. Take off the heat and let cool. When cool add the vanilla.
  • 2. Freeze the mixture in an ice cream machine until set then remove to freezer.
  • 3. Alternatively, you may pour the mixture into a shallow pan and freeze in your freezer until semi-solid. Take the mixture from the freezer, chop into several pieces, and process in the chilled bowl of a food processor or blender until well blended. Return to the freezer for at least another two hours before serving.
