12 ounces bistro naturals polska kielbasa loop smoked sausage
8 ounces shrimp
1 ounce extra virgin olive oil
1 1/2 tablespoons garlic
1 medium onion (large dice)
2 green peppers (large dice)
2 -28 ounces diced tomatoes (I used diced tomatoes with green chiles)
1 (49 ounce) can chicken broth
1 teaspoon cayenne
2 bay leaves
1 (14 ounce) box long grain white rice

Steps:

  • Saute onions, garlic, peppers and celery in oil, add sausage and continue to saute. Add tomatoes, chicken broth, bay leaves and cayenne and simmer on low for 30 minutes. Add rice and cook till tender. Finally add shrimp and simmer until shrimp is cooked, approximately 4-5 minutes.
  • NOTE: I used bacon chopped instead of the olive oil to saute vegetables.
