I cook for one anymore and love to find ways to 'morph' recipes into a new and different meal. This dish uses leftovers and is really satisfying. I've only made it with leftover roast beef, but I imagine that leftover hamburger would work as well.

Steps:
- 1. If using fresh mushrooms, saute for about 4-5 minutes until they release their moisture and start to turn lightly brown. Or, if using canned mushrooms, drain.
- 2. In a large skillet over medium heat, stir mushrooms (fresh or canned) and gravy until hot.
- 3. Stir in sour cream until smooth.
- 4. Add roast beef and cook until heated through.
- 5. Top each slice of bread with roast beef slices and some gravy and serve open-faced.
