Beef Enchiladas image

This is my youngest grandson's favorite thing that I make. I am having his 18th birthday dinner Sunday, so I will be baking a lot of these, along with Mexican Rice, Refried Beans and Chicken Enchiladas and a six layer chocolate cake. Oh my. I'll probably have to eat a salad..So sad.

2 lb 93% ground beef
2 can(s) taco sauce, mild
1 can(s) red enchilada sauce
1 can(s) diced green chilis, drained
1 pkg mexican blend shredded cheese
1 medium onion, diced
1 pkg flour tortillas (12)

Steps:

  • 1. Brown ground beef in skillet and drain grease. Add taco sauce, enchilada sauce and green chiles; let simmer for ten minutes. In a 9x13 in" baking pan, put a layer of the ground beef mixture in the bottom. Put a couple of heaping tablespoons of mixture inside each tortilla. On top of tortillas, put a layer of cheese and onion. Bake in oven at 425 degrees until cheese melts, about ten minutes.
