Bayy's Vegan Stewed Okra image

This stewed okra is an amazingly delicious Southern/soul food dish that is also a family favorite! An easy vegan/vegetarian option! Serve with rice, as a side dish, or by itself.

2 (14.5 ounce) cans stewed tomatoes
1 cup fresh sweet corn
½ cup diced onion
¼ cup diced celery
2 tablespoons poultry seasoning
1 teaspoon garlic powder
1 cube chicken bouillon
½ teaspoon seasoned salt, or to taste
ground black pepper to taste
1 pound okra, rinsed and sliced

Steps:

  • Combine stewed tomatoes, corn, onion, celery, poultry seasoning, garlic powder, bouillon cube, seasoned salt, and black pepper in a Dutch oven over medium heat. Bring to a boil. Reduce heat and simmer until vegetables are tender, about 10 minutes. Add okra and simmer until stew is thickened, about 5 minutes more.
