Steps:
- Cook the chicken in the oven in a closed dish with a little stock or wine. Combine the cut chicken, apples, celery and walnuts in a bowl. Add enough mayo to just cover. Mix in a couple spoonfuls of plain yogurt or sour cream to lighten the flavor. Add a squeeze of lemon juice and a trace of sugar to-taste.
