Banana Snack Cake image

Number Of Ingredients 15

1/2 c shortening
3/4 c brown sugar
1/2 c sugar
2 eggs
2-3 medium bananas
1 tsp vanilla extract
2 c all purpose or wheat flour
1 tsp baking soda
1 tsp salt
1/2 c buttermilk
FROSTING
1/2 c brown sugar
1/4 c butter
6 Tbsp 2% milk
2 1/2 - 3 c powdered sugar

Steps:

  • 1. In a large bowl, cream shortening and sugars until light and fluffy.
  • 2. Add eggs, one at a time, beating well after each addition.
  • 3. Beat in bananas and vanilla.
  • 4. Combine flour, baking soda and salt in a separate bowl.
  • 5. Add to the creamed mixture alternately with buttermilk, beating well after each addition.
  • 6. Stir in nuts, if desired.
  • 7. Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  • 8. FROSTING
  • 9. In a large saucepan, combine the brown sugar, butter and milk.
  • 10. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; cool to lukewarm.
  • 11. Gradually beat in powdered sugar until frosting reaches spreading consistency and then frost the cake and enjoy!
