Banana-Raisin Whole Wheat Bread, No-Egg, No-Oil image

I am a very rookie cook, but always health conscious. Adapted this recipe from the one on the back of whole wheat flour bag. Anyway, this "monkey bread" as my kids call it , has flax seed powder instead of eggs, applesauce instead of oil. If you don't like the Splenda Brown Sugar Blend, use 1 1/4 cup of brown sugar.

2 1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon salt
2 tablespoons flax seed meal
6 tablespoons water
1/3 cup applesauce
3 medium bananas (mashed)
1 cup raisins
2/3 cup plain nonfat yogurt
1 teaspoon cinnamon
1 teaspoon salt
3/4 cup Splenda brown sugar blend
1 teaspoon vanilla
1 teaspoon banana extract


  • Grease bottom 9x5 loaf pan.
  • Mix the Flax seed powder with 6 TBSP water. Mix and sit for 30 sec.
  • Stir all ingredients and flax mixture together until blended.
  • Bake for 60-75 min at 350 degrees or until toothpick comes out clean.
  • Cool 10 minute.
  • Remove from pan and cool on wire rack.
