Banana Oatmeal Muffins image

I had so many over-ripe banans and wanted to do something differnt than bread. (made alot of that so far this season.) So I came up with this recipe using a basic muffin recipe. Turned out awesome, hope you enjoy!

2 cup(s) old fashioned oatmeal
2 cup(s) over-ripe bananas (aporx 4)
1 cup(s) milk
2 large eggs
4 tablespoon(s) unsweetened applesauce
1 1/2 cup(s) sugar
1 teaspoon(s) vanilla
2 cup(s) flour
2 tablespoon(s) baking powder
1 teaspoon(s) baking soda
1 teaspoon(s) cinnamon
1/2 teaspoon(s) ginger
1/4 teaspoon(s) nutmeg

Steps:

  • Lightly oil bottom of muffin tin or use paper cups, which is what I do. Preheat oven to 350 degres.
  • Stir together oatmael, bananas, milk, eggs, applesauce and vanilla. Set aside. Sift together (I just use a wire wisk) flour, Baking powder, baking soda, ginger, nutmeg and cinnamom stir into banana mixture just until well combined. Do not over mix.
  • Pour into your muffin tins. Each cup should be aprox. 2/3rds full. Bake for 15 to 20 mins or until toothpick comes out clean. They will be a beautiful golden brown when done.
