Banana Nut Muffins image

Number Of Ingredients 12

1 cup flour
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, room temperature
1/2 cup sugar
2 eggs
1 1/2 cups mashed ripe bananas
1/4 cup buttermilk
2 teaspoons vanilla extract
1 cup walnuts, chopped

Steps:

  • Preheat oven to 375°F (190°C).
  • Grease muffin cups.
  • Stir together flour, baking powder, baking soda and salt.
  • Separately cream butter and sugar until light and fluffy.
  • Beat in eggs, and stir in bananas, buttermilk and vanilla.
  • Add dry ingredients and stir to combine.
  • Add walnuts and stir.
  • Pour into muffin cups.
  • Bake 25-30 minutes.
  • Cool for 5 minutes before eating.
