1 1/2 c all purpose flour
1 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
1/2 c butter
3/4 c granulated sugar
2 large eggs room temperature
2 c mashed bananas
1 tsp vanilla extract
3/4 c chopped walnuts (or pecans)

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 8×4 inch loaf pan.
  • 2. In a medium bowl whisk together the flour, baking soda, ground cinnamon and salt. Using a stand or hand mixer on medium high beat the butter and sugar together until smooth and creamy. Turn the mixer to medium low and beat the eggs in one at a time until incorporated. Beat in the mashed bananas and vanilla extract.
  • 3. Turn the mixer to low and add the flour mixture beating just until incorporated. Do not overmix the batter. Remove from the mixer and stir in the nuts just until combined.
  • 4. Bake 55-60 minutes or until a toothpick inserted in the top comes out clean. Cool in pan for 5-10 minutes and then invert bread on to cooling rack. Cool completely before wrapping.
