Banana Carrot Bread image

This moist bread combines banana and carrots for a different take on a low-fat banana bread. It makes great Christmas gifts, baked in small pans.

1 c banana, mashed
1 c sugar
1/4 c oil
1/2 c applesauce, unsweetened
2 eggs
2 c flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1 c grated carrots
1/2 c chopped walnuts

Steps:

  • 1. Combine banana, sugar, oil, applesauce and eggs.
  • 2. Sift dry ingredients and fold into banana mixture, then add carrots and nuts.
  • 3. Pour into a greased 9 x 5" loaf pan and bake at 350ยบ for 55 minutes or until done. Cool in pan on rack for 10 minutes, then remove from pan. Cool thoroughly before slicing. Makes 1 loaf.
  • 4. NOTES: A double batch fills 9 baby loaf pans - bake for 35 to 40 minutes. Makes great Christmas gifts. Also good with coconut or raisins stirred in. I have also used almonds instead of walnuts.
