BAKED FISH WITH HERBS image

Number Of Ingredients 11

6-8 firm fleshed fish fillets, at least ¼ inch thick
½ tsp salt
½ tsp pepper
2 good pinches saffron
1 lemon
1 small orange
(oranges in period were smaller and tangier, if not down right bitter; lemon and orange juice mixed together are closer than either separately to the flavor we are trying to evoke.)
3 tsp chopped parsley
1 tsp chopped marjoram
1 tsp chopped mint
1-2 tbsp olive oil

Steps:

  • Lay fish in well oiled, shallow ovenproof dish and sprinkle with salt, pepper and saffron mixture. Drizzle a little olive oil over the fish, cover and cook for 5-10 minutes. Fish should be firming and whitening ( about halfway done). Remove the cover and douse with the citrus juices and the chopped herbs. Return to the oven and cook until done (about 5-10 minutes). Serve immediately.
