Steps:
- Lay fish in well oiled, shallow ovenproof dish and sprinkle with salt, pepper and saffron mixture. Drizzle a little olive oil over the fish, cover and cook for 5-10 minutes. Fish should be firming and whitening ( about halfway done). Remove the cover and douse with the citrus juices and the chopped herbs. Return to the oven and cook until done (about 5-10 minutes). Serve immediately.
