1/4 c evaporated milk
3 Tbsp Dijon mustard
1/2 c dry bread crumbs
1/2 c Parmesan cheese, grated
2-4 chicken breasts, skinless and boneless

Steps:

  • 1. Preheat oven to 425 degrees. Spray a 13x9 inch rectangular pan with cooking spray.
  • 2. Combine the evaporated milk and mustard in a shallow bowl.
  • 3. Mix bread crumbs and cheese in another shallow bowl.
  • 4. Dip chicken into the milk mixture on both sides.
  • 5. Then dip in the crumb mixture.
  • 6. Place into the prepared dish.
  • 7. Bake for 15 - 20 minutes or until chicken is golden brown and the inside is no longer pink.
