Baked Cauliflower image

When I was first married, my mother-in-law served these. They became my favorite way to eat cauliflower. They are like potato chips...you never can eat just one!

Number Of Ingredients 4

1 head of cauliflower, separated into florets
2 eggs, beaten
1 c bread crumbs, dry
2 Tbsp olive oil

Steps:

  • 1. Wash cauliflower, place in a saucepan, with about 2 inches of salted water, cover pot, bring to a boil, and cook for 10 minutes. Drain cauliflower, and let cool for a minute or two. Don't overcook cauliflower, or it will fall apart.
  • 2. Beat eggs in a shallow bowl, and dip cauliflower pieces in egg, and then breadcrumb.
  • 3. Place breaded pieces in a casserole dish sprayed with cooking spray, drizzle with the olive oil, and bake in a 350 degree oven for 30 minutes, turning pieces so they brown on all sides. Enjoy!
