INGREDIENTS
1-2 tablespoons butter, melted
8 slices white or whole-wheat sandwich bread
2 packages thin bacon
10 large eggs
NO salt (due to bacon)
ground pepper

Steps:

  • Preheat oven to 375 degrees. - Lightly butter standard muffin cups. - place almost crispy cooked bacon around circumference of each of cup - cut bread into rounds that fit bottom of muffin tin and wedge in. - beat eggs with about a cup milk and pepper only. - pour on top of bread (should only be about 1/2 high) and let sit for a bit Bake until egg are just set, 20 to 25 minutes.
