Awesome Chicken Tortilla Soup image

I'm a big fan of chicken tortilla soup, but most all of them are tomato based. This soup is cheese based and better than any tortilla soup I have ever made. The inspiration for this soup came from a Chicken tortilla soup at The Yard House restaurant that I fell in love with and couldn't find a recipe for.

Number Of Ingredients 7

1 pkg bear creek tortilla soup mix
48 oz chicken broth
2 c water
2 pkg shredded triple cheddar cheese
8 oz sour cream
1 rotisserie chicken, chunked
1 pkg tortilla chips

Steps:

  • 1. Bring the chicken broth and water to a rolling boil. Whisk in soup mix. Reduce heat to Medium and simmer uncovered 15 minutes, stirring occasionally.
  • 2. Add sour cream and both packages of shredded cheese slowly (stirring after every hand full)
  • 3. Add rotisserie chicken.
  • 4. Salt and pepper to taste.
  • 5. Serve in a soup bowl over tortilla chips.
