Auntie Irene's Famous Red Pickle Mango image

Okay my JAP Ohana, this is a wonderful family recipe that was created from my aunt who is now 76 years old. I made this local snack many times over - love it if I only can find green mangoes. If you can find green mangoes - you have to try it - & again you will find this snack in many Hawaii stores - its just expensive tho just for a couple of ounces its priced at $3.99 or more. Why buy when you can make it yourself.....look out for more fam recipes!

Number Of Ingredients 6

5 cup(s) hot water
4 cup(s) brown sugar, firmly packed
1/2 cup(s) hawaiian salt or kosher salt
1 3/4 cup(s) or 2 cups white vinegar
2 1/2 teaspoon(s) red food coloring
4 large or 5 lrg green mangoes, cored & sliced

Steps:

  • Boil all together until its cooked (until sugar melts); let cool & then pour liquid in glass jar & soak green mangoes for 3 weeks for up to 1 month.
