Asparagus with Parmesan Vinaigrette image

Number Of Ingredients 7

2 pound(s) asparagus
1/2 cup(s) olive oil
1/4 cup(s) champagne vinegar
1 tablespoon(s) dijon mustard
1 teaspoon(s) salt
2 tablespoon(s) freshly grated parmesan cheese plus more for serving
1/4 cup(s) bacon cooked and crumbled small

Steps:

  • Cut the hard woody parts of the asparagus off. Place a large skillet on stove with about 2 inches of water. Bring to a boil and add some salt. Add the asparagus and reduce heat to medium and cook about 5 minutes.
  • In a baking pan whisk the olive oil, vinegar, mustard & salt together. Stir in the Parmesan cheese. Drain the asparagus and add to the vinaigrette. Stir around in the vinaigrette to completely cover all the asparagus
  • Remove asparagus to a plate. Sprinkle the bacon over top and add more Parmesan cheese and serve.
