Steps:
- Melt butter in top of double boiler over simmering water. In a bowl, beat eggs with sugar and add gelatin. Add to melted butter and cook, stirring constantly, until thickened, about 6-8 minutes. Remove from heat. Add almonds and amaretto. Blend well. Refrigerate until mixture just begins to set. Whip cream to soft peaks and gently fold into Amaretto mixture. Chill about 4 hours, or up to a week.
