Albondigas, Mexican style. image

Well, this is a real old recipe made by my Mom when we were little, it brings back allot of memories when my Father was here it was his favorite.

Number Of Ingredients 12

1/2 lb ground pork.
1 lb ground beef.
1 c each diced carrots, zucchini, celery.
1 large onion chopped, 4 garlics, divided .
1/4 medium size of cabbage pulled apart
1/2 bunch chopped fresh cilantro.
2 Tbsp fresh mint chopped.
4 Tbsp salt and pepper divided.
2 large eggs.
2 Tbsp flour.
3 large fresh tomatoes (in blender).
2 Tbsp mazola.

Steps:

  • 1. In a large bowl combine the grown pork and beef, salt and pepper,oregano, mint, eggs and flour, then in small pan add oil and 1/2 of the onions and garlic, let it cool and add to meats, then make your meat balls about 1 inch or 2 depending the way you would like them, set aside in the refrigerator.
  • 2. In a big soup pot at least 6 quarts size add Mazola and fry onion, garlic and tomatoes then add your water a little bit more than half of the pot, add all your vegetables salt to taste and when vegetables are half cooked add your meatballs and let it simmer until meatballs are tender, add you cilantro.
  • 3. You may serve it with Spanish rice or steam white rice on the side.
